Week Night Ground Turkey Chili

Chili is a great all-in-one meal. It makes excellent left overs and is always filling. However, it’s rarely fast. This version makes a great week night meal and is rich in flavor even with the short cooking time. Serve with chips and cheese, or over macaroni for chili mac.

 

Ingredients:

  • 1+lb of ground turkey
  • 1 to 2 Tbsp of oil
  • 2 to 3 Tbsps of Chili seasoning mix (see my recipe below)
  • 2 carrots, peeled and diced small
  • 1 onion diced small
  • 1 red/yellow/orange bell pepper, cut small
  • 1 can diced tomatoes drained
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained, rinsed and mashed with potato masher
  • 1 can tomato sauce
  • Salt

 

Directions:

In large Dutch oven or heavy bottomed pot, add oil and heat on medium high until shimmering. Add onion and carrots, cook for 2 to 4 minutes, add ground turkey. Cook until fully cooked and most liquid is gone, add the pepper and lightly salt. Cook until pepper start to soften slightly, 1 to 3 minutes. Add the black beans and kidney beans and chili seasoning.  Cook for 1 minute until spices are fragrant. Add diced tomatoes, cook for 1 minute until fragrant. Add the can of tomato sauce. Reduce heat to low and simmer from 5 to 20 minutes, stirring frequently.

 

Chili Seasoning Mix

Makes about a cup

  • 2 Tbsps of Chili powder (mild)
  • 2 Tbsps of ground Cumin
  • 1 Tbsp of sweet Paprika
  • 1 Tbsp of ground garlic
  • 1 Tbsp of smoked Paprika
  • 2 tsps onion powder
  • 2 tsps of dried Oregano
  • 2 tsps of salt
  • 1 tsp of black pepper
  • 1 to 2 tsps of red chili pepper flakes (to taste)
  • 1 tsp cayenne pepper (more or less to taste)

When not in use, store in an airtight container.
